Black and White Coconut Cubes Recipe
The recipe makes 32 servings (cubes). Nutritional value per serving: 101 Calories, 8 g Fat, 1 g Carbs, 1.7 g Protein.
Ingredients for 2 black layers:
- 2 eggs
- 7 oz. (200 ml) coconut milk
- 3 oz. (100 ml) coconut oil (melted to liquid form)
- 7 oz. (200 g) coconut flour
- 1 tbsp. cocoa powder
- 7 oz. (200 g) swerve
- 1 tbsp. baking powder
Ingredients for the white layer:
- 2 pints (1 l) coconut milk
- 10 oz. (300 g) swerve
- ½ Tsp. xanthan gum
- 7 oz. (200 g) shredded coconut
At first, preheat the oven to 350°F (180°C) and prepare the round pan about 11 inches in diameter. Then mix the eggs and add other ingredients for black layers. Divide the mixture into two parts and bake the first part for 10 minutes.
While baking the first layer, cook all ingredients for the white layer. Then pour this cooked filling over baked first black layer and put in the oven. Bake for about 10 minutes and take it out. Then pour over the rest of the black mixture and bake for about 15 minutes.
When it’s done, leave it to cool. Optionally, you can put on the melted chocolate.
