New Year’s table – one of the most important symbols of the holidays and New Year’s salads – their main decoration. Every housewife wants to surprise and delight the loved ones by preparing something strange and solemn for New Year’s feast.

What could be tastier and healthier than chicken salad with nuts? Vibrant and colorful, will remind you of the pinecones. Its preparation does not require much time.

Recipe for Pinecone salad

Ingredients that you need:

  • 10 oz. (300 g) cream cheese
  • 2 oz. (50 g) walnuts
  • 7 oz. (200 g) boiled chicken (or ham)
  • 1 oz. (20-30 g) dill
  • 2 oz. (50 g) mayonnaise (you can make it yourself, recipe’s bellow)
  • 1 clove garlic (if wanted)
  • salt to taste
  • almonds for decoration


At the cream cheese add finely chopped dill and garlic. Then add the mayonnaise to the mixture and whisk using electric mixer (or blender).

Finely chop the walnuts. Cut the boiled chicken (or ham) into small cubes. Then add to the previous mixture. Also, add salt to taste.

Salad, in the form of pinecones, serve on a larger plate (you can make 2 pinecones). Decorate with roasted almonds (or raw if preferred) and garnish salad with sprigs of dill (fennel or rosemary).

Recipe for Homemade Mayonnaise

This recipe’s for 5 oz. (150 g) of mayonnaise. Author of the recipe is Libby.

Ingredients that you need:

  • 1 whole egg
  • salt and pepper to taste
  • about 1 cup mild tasting olive oil (add more or less, depending on the thickness of mayonnaise required)


Find the appropriate jar (tall enough) that your blade attachment of your stick blender fits into.

Then place the egg in the bottom of the jar. Pour in 1 cup of oil. Add the salt, pepper and any other seasonings on top. You can add mustard, garlic, parsley, or rosemary.

Place the blade attachment in the bottom of the jar and start blending until the egg and oil mixture is smooth, thick and pale. Add more or less oil depending on how thick you like your mayonnaise.

Also, you can add lemon juice or vinegar if you like it to taste more like store bought mayonnaise.

Then use the mayonnaise for your New Year’s salads or just eat it in some other combinations.
