If you’re preparing festive table and should stick to low-carb menu, this LCHF roll must be there. We know that roast chicken can be dry, but with this combination of ingredients it’s impossible. It looks so good that you’ll be proud in front of your guests. But also, it will contribute to the table decoration.
LCHF Roll of bacon wrapped chicken
Preparation of this recipe takes time and more effort, but believe me it is worthy!
Ingredients that you need:
- 2-3 pieces of chicken white meat (although turkey fillet wouldn’t be bad also; your choice)
- about 4 – 5 oz. (120 – 150 g) sliced bacon (long and thin slices)
- 3 – 4 oz. (100 – 120 g) dried sausage (great if it’s little hot)
- a little olive oil
- a little salt and white pepper
- dried shallot and parsley (also can add some other spices if liked)
- several slices of Gouda cheese (also can add other cheese if liked)
- aluminum foil
The First Phase of Preparation:
In the evening separate the meat from the bones so you would let it stand overnight. Each steak (half) notch along the middle and beat it, so as to obtain from each half of white meat a big and thinner steak. Then arrange the steaks on greased foil to form a long and narrow rectangle. Season meat to taste and wrap in foil. Leave it in the fridge overnight.
The Second Phase of Preparation:
The next day, unwrap the foil and align the slices of bacon over the meat (crisscross looks nicer). Then cover this with second greased foil and “roll over” so that the meat now lies on the bacon. On the meat in the middle align slices of cheese and sprinkle with finely chopped sausage. From spices put dry shallots and dry parsley.
Wrap the roll (should be thin, to fit in the baking pan diagonally) and wrap it well with foil so bacon would adhere to the meat during baking. Bake at 320-350 °F (160 – 180 °C) for 40-50 minutes, and then open the foil at the top of the roll so bacon will be roasted.
Before removing from the baking tray, if has too much fat in the foil, remove a part. Again, a part of fat must stay so bacon remains well attached to the roll. Before cutting you should cool it in the fridge, wrapped in foil. And before serving let your LCHF roll stand at room temperature a while.
For side dish we suggest mashed cauliflower and salad of tomato and arugula.
