Greek Salad Omelet – recipe
This recipe’s for 4 servings. It takes only 20 minutes for cooking. Nutritional value (per serving): 371 kcal; 28 g fat (9 g saturated); 5 g carbs (sugar 0 g, fiber 1 g); 24 g protein and 2 g salt.
Ingredients that you need:
- 10 eggs
- handful of parsley leaves, chopped (optional)
- 2 tbsp olive oil
- 1 large red onion, cut into wedges
- 3 tomatoes, chopped into large chunks
- large handful black olives, (pitted are easier to eat)
- 100 g feta cheese, crumbled
Preparation: At first turn on the heat to high. Then whisk the eggs in a large bowl with the chopped parsley, pepper and salt, if you want. Heat the olive oil in a large non-sticky frying pan.
Then fry the onion wedges over a high heat for about 4 minutes until they start to brown around the edges. Put in the tomatoes and olives and cook for 1-2 minutes until the tomatoes begin to soften.
Turn the heat down to medium and pour in the eggs. Cook the eggs in the pan, stirring them as they begin to set, until half cooked; but still runny in places – about 2 minutes.
Scatter over the feta; then place the pan under the heat for 5-6 minutes until omelet is puffed up and golden. Cut into wedges and serve straight from the pan.
Note: This is vegetarian version, but if you like it meaty, make a non-vegetarian dinner. You just need to ripple over slices of ham or bacon before scattering over the feta. Then grill until crispy.
