Brownies – Quick and easy recipe for juicy low carb dessert
|There are lots of recipes for brownies, but here is the one in low-carb version! These brownies are juicy because of the secret ingredient. It’s healthy and often used food in low carb nutrition. Of course, we talk about zucchini!
You cannot taste zucchini at this cake, but they give it the juiciness and therefore it’s special. You can complement this brownie with cheese ball and vanilla flavor. Vanilla goes great with chocolate. Also, you can add whey if want to increase the proportion of protein.
Recipe for juicy brownies
Ingredients that you need:
- 3 medium sized zucchini
- 2 oz (60 g) of coconut flour
- 1 oz (30 g) cocoa powder
- 3 eggs
- ½ teaspoon sodium bicarbonate
- Stevia or Erythritol, to taste
For vanilla balls you need:
- 15 oz (450 g) Ricotta cheese (we published recipe for homemade Ricotta cheese earlier)
- Vanilla extract (recipe for homemade is below)
- 2 oz (50 g) whey vanilla (optional)
- Stevia or Erythritol (optional)
Preparation: Clean zucchini, grind and leave them to release water. You can add a little salt to leave more water, or you can squeeze manually as hard as you can.
Drain zucchini well and then add the eggs, coconut flour, cocoa, sodium bicarbonate and sweetener and blend all using mixer.
Bake on baking paper in a small pan at 180 degrees C for about 40 minutes. Then remove from the oven and leave to cool.
For vanilla balls just mix Ricotta cheese with whey and add sweetener if think it’s not sweet enough. Also you can prepare it without whey, just add vanilla extract: it would be smaller proportion of protein.
Serve 1-2 vanilla balls with each brownie.
Recipe for homemade vanilla extract
If you want to be sure in contents of vanilla extract, make it yourself. We’ll tell you how.
Ingredients that you need are 7 vanilla beans and 1 cup of vodka / 35% alcohol. Also you can use Bourbon, Rum or Brandy with 35% alcohol. For storage you’ll need 8 oz (225 ml) glass bottle or jar.
Preparation: Slice each vanilla bean once long-ways and place in bottle. Pour one cup of vodka, rum or alcohol of your choice. But be sure that beans are completely submerged.
Then shake once or twice a week. Wait for 8 weeks and you have vanilla extract made by yourself!
