Meatballs in Marinara Sauce for Tasty Low-carb Lunch!

Great recipe for keto meatballs you must try. These are cheese-free – the mixture of ground beef and pork meat cooked in a Marinara sauce. This lunch is easy to make and the taste is amazing.

Keto Meatballs in Marinara Sauce – Recipe

The recipe makes 4 servings (3 pieces each). Nutritional value (per serving): 533 Calories, 39 g Fat, 3 g Carbs, 44 g Protein.

Ingredients that you need:

  • ½ lb. beef meat, ground
  • ½ lb. pork meat, ground
  • 5 oz. (150 g) pork rind breadcrumbs
  • 2 eggs
  • 1 tbsp. olive oil
  • 2 tbsp. fresh parsley, finely chopped
  • 1 tbsp. onion, finely grated
  • 1 clove garlic, grated
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 ½ cups homemade Marinara Sauce (if you don’t make your own sauce, you can use this)

Preparation:

At first, mix well ground beef meat and pork meat. Then add the eggs, olive oil, onion, garlic, parsley, and pork rind breadcrumbs. Combine well these ingredients, and season with salt and pepper.

Use this mixture to shape balls. Depending on the size of the balls you make, you will get a different number of meatballs. Out of this quantity of meat, I made 12 meatballs (3 pieces per serving).

Note: If the meatballs tend to fall apart while shaping, add more breadcrumbs. You can bake these shortly in the oven just to harden (but I don’t do that).

In a saucepan, pour Marinara sauce and start to cook. Depending on how dense it is, add some water. Leave it to boil a few minutes, and then begin to put in the meatballs one by one. Be careful they don’t stick to the bottom of the saucepan. Stir occasionally. When all the meatballs are in, lower the heat and cook for about 40 minutes.
