Today, we have the recipe for a delicious zucchini meaty casserole. Here we say for lunch, but you can eat it for dinner if you like so. Important thing is that it is easy and delicious.
Zucchini Meaty Casserole Recipe
The recipe makes 6 servings. Total time of preparation is about 50 minutes. Nutritional value (per serving): 214 Calories, 14 g Fat, 1.5 g Carbs, 19 g Protein.
Ingredients that you need:
- 1 lb. (500 g) ground meat (mix of beef and pork, preferably)
- 1 zucchini (large size)
- 3 eggs
- 1 onion
- 3 oz. (100 ml) sparkling water
- Spices: salt, pepper, celery leaves or something else of your choice.
At first, cut the onion at small cubes and fry it with ground meat in a skillet. If you need, use a few drops of oil to grease a skillet. Season it to taste.
While frying the meat, cut zucchini at thin slices. Take a casserole and cover the bottom with zucchini slices. Then place a layer of meat. Cover with zucchini again and then put the rest of meat (if there is the rest). Finish it with the layer of zucchini.
Pour the sparkling water into prepared zucchini and meat casserole. Place the meal into a preheated oven at 400 °F (200 °C).
After 30 minutes, take out the casserole from the oven. Cover zucchini with beaten eggs and bake for another 10 minutes.
Serve warm and enjoy.
