Hazelnut Roll – Delicious Low Carb Biscuit with Creamy Stuffing

The recipe makes 12 servings. Nutritional value (per serving): 108 Calories, 9.5 g Fat, 1 g Carbs, 4.6 g Protein.

Ingredients that you need:

For biscuit:

  • 4 eggs
  • 1 ¾ oz. (50 g) fried hazelnuts, ground
  • stevia and erythritol powder to taste

For stuffing:

  • 3 eggs
  • 1 tbsp. unsweetened cocoa powder
  • 2 oz. (60 g) butter
  • 1 ¾ oz. (50 g) fried hazelnuts, ground
  • stevia and erythritol powder to taste


For the biscuit:

Whisk the egg whites into a solid snow with a pinch of salt. In the other bowl, whisk the yolks with stevia and erythritol powder. Add 50 grams of ground fried hazelnuts. Stir in lightly the egg whites snow with a mixing spoon or silicone spatula.

Pour into a baking tray (9×14 inches) covered with a baking paper. Bake in the preheated oven at 180°C (350°F) 10 – 15 minutes. Check whether it is baked using a toothpick or knife blade.

When the biscuit is done, remove from the oven and leave it to cool down. Then remove baking paper, and place the biscuit on the wet cotton cloth.

For the stuffing:

Mix the eggs, sweeteners, cocoa, and butter. Continue to cook on steam until the mixture is thickened. Stir in 50 grams of ground fried hazelnuts and let the mixture cool.

Place the stuffing over the biscuit, spread it well and wrap the biscuit into a roll. Keep the roll for a couple of hours in the refrigerator and then cut it into slices. Serve and enjoy.
