Leeks, Gorgonzola and Chicken in Tasty Low Carb Pie

What for dinner? Here is an idea. The delicious pie with leeks, chicken, and gorgonzola cheese. Healthy, tasty, packed with proteins and low in carbs. Great combination of flavors – worth of trying.

The recipe makes 8 servings. Nutritional value (per serving): 279 Calories, 21 g Fat, 4.8 g Carbs, 15 g Protein.

Ingredients that you need:

  • 4 leek whites
  • 1 chicken fillet
  • 1 egg
  • 5 oz. (150 g) of Gorgonzola cheese
  • 7 oz. (200 ml) of half and half
  • salt and pepper
  • olive oil

Cheesy pie crust:

  • 1 (8 ounces) package cream cheese, room temperature
  • 2 eggs
  • 1 teaspoon garlic powder
  • ½ cup grated Parmesan cheese

Preparation:

Step 1

Wash and cut the leek whites into 2 inches long pieces. Half them. Then cut the chicken into small cubes.

In a pan, heat the olive oil. Cook over medium heat for 15 minutes the slices of leeks and chicken. Season it with salt and pepper. Stir while cooking.

When done, set aside.

Step 2: Make the pie crust.

Preheat oven to 350°F (180°C).

With a handheld mixer, mix cream cheese, eggs, garlic powder and parmesan cheese until combined. Spread into round baking dish and bake for 10 minutes. Remove from the oven.

Step 3

Arrange the leeks and chicken cubes on the cheesy crust.

Cut the gorgonzola into cubes.

In a bowl, mix the egg with half and half. Add the gorgonzola. Season it with salt and pepper. Mix well.

Pour this mixture over the leeks and chicken.

Bake for 30 minutes.
