Creamy and Juicy Kohlrabi in Low Carb High Fat Style

A Few Words about Healthy Kohlrabi

Kohlrabi is a tasty and useful vegetable, somewhat unusual, with a stalk and “apple” from which leafy stems grow. It belongs to the cabbage family, and it originates in northern Europe. Young vegetables are very juicy, soft and delicious, mostly used raw as a salad. Mature veggies are most often used cooked, braised and baked.

The vegetable is extremely rich in vitamins and dietary fibers and contains only 27 kcal per 100 g. Fresh is a good source of vitamin C, providing 62 mg per 100 g. Vitamin C (ascorbic acid) is soluble in water and is a powerful antioxidant. It helps the body to maintain healthy connective tissue, teeth, and gums. Its antioxidant properties protect the body from diseases and carcinoma and help remove harmful free radicals.

Creamy and Juicy Kohlrabi – Recipe

The recipe makes 2 servings. Nutritional value (per serving): 390 Calories, 40 g Fat, 3 g Carbs, 1 g Protein.

Ingredients that you need:

  • 1 kohlrabi
  • 2 oz. (60 g) butter
  • 3 ½ oz. (100 g) Crème Fraiche
  • a few parsley leaves, freshly chopped
  • ½ garlic powder
  • salt and pepper to taste


Clean the kohlrabi and chop it into cubes.

Melt the butter in a skillet. Then add kohlrabi cubes and a few tablespoons of water. Simmer for about 15 minutes or until vegetable is nice and soft.

Season it with salt, pepper and garlic powder. At the end of simmering, add Crème Fraiche, stir well and remove from the heat.

Sprinkle with parsley and serve.

Note: This dish is the great meal alone, but you can serve it also as a side with the main course (some roasted fish, turkey or chicken).
