Definitely on the list of my favorites! It is simple and quick to prepare, with a few affordable ingredients. Also, Coconut Rhapsody is low in carbs for all of you who are eating according to this dietary regime.

Coconut Rhapsody Recipe

The recipe makes 1 serving. It takes about 10 minutes to prepare. Nutritional value: 170 Calories, 10.2 g Fat, 7 g Net Carbs, 5 g Protein.

Ingredients that you need:

  • 5 fl. oz. (150 ml) unsweetened coconut milk (Silk)
  • 3 tbsps. organic coconut flour (Bob’s Red Mill)
  • 1-2 tbsps. unsweetened shredded coconut (Bob’s Red Mill)
  • 1 fl. oz. (30 ml) water

Preparation:

Pour the coconut milk and water in a sauce pan. Then add the coconut flour and shredded coconut and place to the medium heat to cook. Wait until it starts to thicken up, and then cook for approx. 3 minutes at low heat to the desired density.

Pour into a bowl and decorate according to your desire. You can use fruit, nuts, or something else. Enjoy the amazing coconut rhapsody!
