Easy Homemade Keto Vanilla Cookies – Great with Coffee!

If you enjoy your coffee with some dry cookies, then probably avoid these sweet bites while on Keto. The main ingredients are usually flour and sugar, so that’s a big no. But here we have a great recipe for Keto Vanilla Cookies which are extra delicious, fragile and simply melt in the mouth. They are high in fat and low in carbs, so feel free to enjoy them with your favorite coffee.

Keto Vanilla Cookies

The recipe makes 35 cookies (divided at 7 servings). Nutritional value per serving (5 cookies): 317 Calories, 30 g Fat, 3.2 g Net Carbs, 9 g Protein.

Ingredients that you need:

  • 3 Tbsp. (40 g) lard
  • 1 egg
  • 2 Tbsp. Erythritol
  • 3 ½ oz. (100 g) ground walnuts
  • 7 oz. (200 g) almond flour
  • 1 Tsp. pure vanilla extract
  • lemon zests

Mix the lard and Erythritol until foamy. Then add the egg, vanilla extract, ground walnuts and almond flour.

In the resulting mixture, add the grated lemon peel (zests).

Knead until you get a nice dough.  Then roll out the dough and make cookies, using desired molds. Line the cookies in a baking tray covered with baking paper.

Bake for about 20 minutes at 200 degrees C (390 degrees F) in a pre-heated oven. When cookies got a nice color remove from the oven and leave them to cool.

Serve and enjoy.
