Eggplant Slices with Cheesy Filling – Low Carb Lunch Recipe!

No matter how hard you think, sometimes you just have no idea what to eat for a lunch when you are on a low-carb diet. One day meaty meal is just what you need, but the other no. Well, here we present a low-carb veggie lunch completed with Gouda.

Eggplant Slices with Cheesy Filling

This recipe makes 8 cheesy eggplant slices. Nutritional value per slice: 59 Calories, 5.6 g Fat, 0.7 g Protein, 0.9 g Carbs.

Ingredients that you need:

  • 1 eggplant
  • 4 cherry tomatoes
  • 2 oz. (50 g) of Gouda cheese, grated
  • 2-3 Tbsp. olive oil
  • Mediterranean mix of spices
  • salt and pepper to taste

Preparation:

At first, preheat the oven to 200 degrees C (390 degrees F).

Then slice the eggplant into thick rings and line them on a paper towel to drain. Season it with salt and pepper.

Cut the cherry tomatoes in half and put on each slice of eggplant.

Place the grated Gouda and mix of spices on the top of eggplant rings. Sprinkle over with 2-3 tablespoons of olive oil.

Put in the oven and bake for 15 minutes, or until the eggplant softened and Gouda melted.

Note: Serve with fresh cheese, or with chicken if you still want some meat with it.
