Meringue Cookies without Sugar! Enjoy this LCHF Treat with no Regret!

Meringue cookies are known as pretty sugary, so it is not strange that everyone on a healthy diet avoids these. But we would all like to enjoy these sweets occasionally, so we present this sugar-free recipe for you. It is so simple, made with just a few ingredients and ideal for every occasion.

LCHF Meringue Cookies

This recipe makes 12 small cookies. Here is the nutritional value per cookie, so you can decide how much cookies are enough for the serving.

Nutritional value per cookie: 22 Calories, 1.75 g Fat, 1.4 g Protein and 0.5 g Carbs.

Ingredients that you need:

  • 3 egg whites
  • 1 oz. (25 g) ground walnuts (or almonds)
  • 1 Tbsp. cocoa powder unsweetened
  • about 10 drops liquid stevia (or to taste)

Preparation:

At first, heat the oven to 130° C (260° F).  In meantime, beat the whites into the solid snow. When the snow is done, add a sweetener and mix a bit more.

Then gently add the cocoa and stir with the spatula.  Add the ground walnuts and also stir with the spatula.

Bake as small packs onto baking paper, or in small molds for muffins at 130 ° C for 30 min. Then heat down the oven to 100° C (210° F) and dry for another 30 minutes.

At the end, carefully press one of the cookies to see if they remained soft. If they are, dries until they become hard and crispy.

Note: Maybe the better option is to bake meringue cookies as packs on a baking paper, so it would be easier to dry. Or place them into a paper molds.
