Chicken kebab with peanut sauce for low-carb / keto lunch

The interesting spicy chicken recipe in combination with peanut sauce is something you have to try. It’s perfect idea for your low-carb lunch. Chicken is not dry because grilling gives it juiciness. And with this unusual sauce, it is the richness of flavor.

Recipe for chicken kebab with peanut sauce

Ingredients that you need:

  • 1 1/3 lb. (600 g) of chicken white meat, cut into strips about ½ inch thick
  • 16 wooden sticks for foods

For marinade:

  • 1 tsp. grated lemon peel
  • 2 tbsp. lemon juice
  • 1 tsp. of coriander seed or ½ tsp. ground coriander
  • 2 tsp. turmeric
  • 1 tsp. chili pepper
  • 2 tsp. soy sauce
  • 2 tbsp. olive oil
  • ½ tsp. sea salt

For peanut sauce:

  • 3 tbsp. peanut butter
  • 1 tbs. lemon juice
  • 3 tbs. Greek yogurt
  • 1 clove garlic, finely chopped
  • a pinch of chili pepper flakes
  • sea salt to taste

Preparation:

Put all the ingredients for the marinade in a blender and mix until you get a thick, uniform mass. Place the strips of chicken in a shallow dish, pour the marinade and gently stir. Then cover with plastic foil and leave to marinate for 2 hours in the fridge. Stir occasionally.

To make the peanut sauce mix all ingredients for the sauce well. Then add salt to taste and leave the sauce on the side. Line the marinated chicken strips in a zigzag on the sticks, and bake on a hot grill 2-3 minutes on each side.

Serve with peanut sauce and your favorite salad. We suggest lettuce.

Note

Before grilling, hold the wooden sticks submerged in water for 20 minutes so they wouldn’t burn while grilling.
