Oven-baked Chicken and Zucchini in creamy sauce

Recipe for oven-baked chicken and zucchini in creamy sauce

This recipe makes 4 servings, and it takes about 35 minutes to be done. Preparation is quite simple.

Ingredients that you need:

  • 2 zucchini
  • 1 leek
  • 1 onion
  • a few garlic cloves
  • 4 tbsp. pumpkin seed oil
  • 4 chicken fillets
  • salt and pepper to taste
  • 1 tbsp. lemon juice
  • Cheese Gouda – amount as desired
  • 7 oz. (200 g) cream
  • 2 tbsp. mustard, medium sharp
  • Chili powder (if desired)
  • Parsley, chopped

Preparation:

At first clean zucchini and leeks and cut into slices or rings. Finely dice onion and garlic.

Then heat 2 tbsp. of oil in a frying pan and brown the fillets all around. Season with salt, pepper and lemon juice and put into a baking dish.

Heat the rest of the oil in the frying pan and simmer onion and garlic. Add the remaining vegetables and sauté for a short time. Season with salt and pepper and add to the meat.

Rub the cheese. Mix the cream and the mustard with a pinch of salt, pepper and chili. Pour the sauce over the ingredients in the baking dish and sprinkle with cheese.

Bake in the preheated oven at 200 degrees C (390 degrees F) for 20 to 25 minutes. Garnish with parsley before serving. Enjoy!
