A delicious portion of vitamins with fresh salad and warm mushrooms from the pan will amaze you. It is my favorite choice for low-carb dinner. It’s light, colorful, tasty and nutritious. But what I like the most – it’s quick to prepare, as I’m always tired for making something complicated that lasts.
Colorful salad with mushrooms
This recipe makes 2 servings. Total time for preparation is just 15 minutes. Calorie value 101 kcal; Carbs 5.5 g; Protein 6.5 g; Fat 5.3 g.
Ingredients that you need:
- 10 mushrooms
- 2 tomatoes
- 1 head of lettuce
- a handful of baby spinach
- a handful of arugula
- 1 handful of red lettuce
- 1 tablespoon olive oil
- 1 tablespoon Balsamic vinegar
At first, wash the all lettuce leaves, drain from the water, cut on smaller pieces and place in the salad bowl. Then cut the tomatoes and add to the salad. Add salt, pepper and balsamic vinegar and stir well.
Then chop the mushrooms to quarters (of course, after you cleaned them). Heat the oil in a pan and fry the mushrooms on all sides.
Spread the lettuce on two plates and place the fried mushrooms on top. Enjoy in this perfect salad as the side dish or your light meal.
