Low-carb Spinach Roll – recipe

This recipe makes 3 servings. Takes 10 minutes for preparation, and 15 minutes for cooking. The entire roll contains about 25 grams of carbohydrates.

Ingredients that you need:

  • 5 oz. (150 g) cooked ham
  • 5 oz. (150 g) cream cheese
  • 2 oz. (60 g) Gouda, grated
  • 6 oz. (180 g) creamed spinach (you can buy it, or make it yourself, recipe’s bellow)
  • 3 extra-large eggs
  • salt and pepper to taste

At first, preheat oven to 200° C (390° F). In a bowl, mix earlier prepared creamed spinach with eggs. Add a pinch of salt and pepper. Stir all until the mixture is slightly frothy.

Then spread the mass onto a baking tray covered with baking paper. Distribute as far as possible to form a rectangle. Then spread Gouda and place in the oven to bake for 12 to 15 minutes.

When cheese becomes golden brown, the base for roll is ready. Now it must cool down completely.

Then spread the fresh cheese evenly on the base, place the ham over and roll everything. Finally, cut the roll into equal slices.

You can serve immediately or leave in the fridge for later.

Note: Also, instead of ham, you can choose salmon, chicken breast, black forest ham or some other if you liked.
