Fritters of Cauliflower – Idea for Low-carb Breakfast or Dinner

We can make fritters from a lot of ingredients. Many of us think of fritters as not so healthy food, because of the amount of oil they absorb during frying. But, there is solution for this problem. Reduce the amount of oil and after frying place the fritters on paper napkin so it would absorb the excess oil.

For healthy fritters, use healthy ingredients. In addition, in our case, these would be low-carb ingredients. And we’ll get nice low-carb meal. I suggest these for breakfast or dinner, because of short preparation time. In the morning, I’m always in a rush, so I need something quickly. And in the evening, I’m too tired for complicated dishes. But, generally you can eat it whenever you want.

Recipe for Cauliflower Fritters

This is a simple recipe that makes 12 servings (fritters). Preparation takes 15 minutes and you need 10 more minutes for cooking.

Nutritional value per serving: Calories 30, Protein 2.2 g, Fat 1.5 g, Fiber 1.1 g, Net Carbs 1.3 g.

Ingredients that you need:

  • 1/2 head of medium cauliflower
  • 1/3 cup Greek yogurt
  • 1/2 tsp baking powder
  • 1/4 tsp white pepper
  • 1/4 tsp cumin
  • 1/8 tsp nutmeg (ground)
  • 1/4 tsp coriander seed
  • 1/4 tsp salt
  • 1/8 tsp lemon juice
  • 3 large egg whites
  • 1 tbsp. olive oil
  • 2 tbsp. organic high fiber coconut flour

Preparation:

At first, boil salted water in a medium pot.  Add cauliflower and cook 3 minutes.  Drain water and dry on a kitchen towel until cool enough to touch. Then mix in a food processor until finely chopped.

Add the yogurt to the food processor along with the coconut flour, baking powder, salt, pepper, cumin, coriander and nutmeg.  Process 1-2 times until combined.

Put the egg whites to the bowl and use a mixer to whip the egg whites (and 1/8 tsp lemon juice or cider vinegar) to stiff peaks.  Add egg whites into cauliflower mixture.

Place a non-stick skillet over medium-high heat and heat the oil until it shimmers.  Drop cauliflower mixture by tablespoonful onto the skillet. Space about 1 inch apart for best results.  Fry for 1-2 minutes on each side until puffed and golden.  Serve warm or cold. Enjoy!
