Ingredients that you need:

  • 2 – 3 eggs
  • 1 tomato
  • 2 pickles
  • ¼ red pepper

Preparation:

Ingredients that you need:

  • 3 eggs
  • 1 tbsp. cream
  • 5 – 6 mushrooms
  • ¼ small onion
  • 1 tbsp. butter
  • ½ tbsp. olive oil
  • 4 – 5 stems of chives

Preparation:

Whisk the eggs in a bowl. Then add whip cream, salt and pepper. Cut onion into strips. Then clean mushrooms and cut into slices.  Cut the chives into rings.

For the chanterelles:

  • 4 oz. (100 g) fresh chanterelles
  • ½ small onion
  • ¼ bunch of chives
  • ½ tbsp. butter
  • ½ clove of garlic

  • sea salt and pepper
  • ½ teaspoon olive oil
  • ½ tbsp. crème fraiche

For the omelet:

  • 3 eggs
  • 1 tbsp. cream
  • ½ tsp butter
  • sea salt and pepper
  • a pinch of ground nutmeg
  • ½ tablespoon olive oil

Preparation:

At first clean the mushrooms. Peel and finely chop the onion and the garlic. Rinse the chives and cut into rings. Then heat the butter in a pan and saute the onion and the garlic. Add the mushrooms, the thyme and the olive oil.

Mix the eggs and cream with a hand blender in a large vessel and season with salt and pepper. In a nonstick pan, heat butter. Pour egg mixture in the pan and fry at low heat for 8 – 10 minutes.

Grind fresh nutmeg on the omelet and coat with crème fraiche. Put mushrooms on the omelet and sprinkle with chives. Fold on half, serve and enjoy.
