I like chicken and I always seek after new chicken recipes. Chicken is nutritious, low in carbs; it is pure protein and ideal for dinner. You can do a lot with it, but the best is that you can prepare it very quickly.

Here is recipe for stuffed chicken and I’m sure that you’ll enjoy this meal.

Chicken stuffed with Mozzarella, Garlic and Roasted Red Pepper

Recipe is super simple, but fresh and light despite of mozzarella. The roasted red pepper (which you can find in a jar, or you can roast yourself) melts in your mouth after it’s baked into the chicken with garlic cloves and fresh basil. It all melds together here in the best way possible.

Preparation time is 10 minutes, cooking time 40 minutes; meaning 50 minutes total. Contains 2 serves.

Ingredients that you need:

  • 2 tbsp extra virgin olive oil
  • 2 boneless, skinless chicken breasts
  • 10 fresh basil leaves
  • 8 small herb marinated mozzarella balls (like you find in the deli section)
  • 6 cloves of garlic
  • 1 roasted red pepper, sliced in half the long way
  • 1 tbsp your favorite seasoning for chicken
  • garlic salt
  • freshly ground pepper
  • 1 tbsp chopped fresh oregano (or 1 tbsp Italian seasoning)

Preparation:

At first preheat oven to 400 degrees F (200 degrees C). Beat the meat slightly and then butterfly the breasts. Place fresh basil in each of the breasts, then top with 4 mozzarella balls each, and squeeze garlic cloves between them. Top with 1/2 of red pepper on top of the mozzarella. Then fold the breasts.

Drizzle the marinated oil from the mozzarella over the breasts if you like; otherwise drizzle with olive oil. Then sprinkle seasoning, a decent dose of garlic salt and ground pepper over breasts. Also sprinkle chopped oregano over the whole thing.

Then place in a glass baking dish, or on a baking pan with baking paper. Bake uncovered for 40 minutes or until internal temp reaches 180 degrees F.

Note:

If you can’t find the mini mozzarella balls that are marinated in oil and herbs in your fresh deli section or olive bar, feel free to use a regular ball of mozzarella cut into 4 slices.
