Creamy chicken in lemon sauce and thyme

Lemon gives refreshing flavor to chicken, and thyme makes it aromatically. Thyme is used a lot in the Mediterranean cuisine as a condiment, and you can add it to vegetables, various meat dishes, pates, fish, salads, sauces and soups. It neutralizes very fatty foods.

Recipe for creamy chicken in lemon sauce and thyme

Ingredients that you need for the recipe:

  • 4-5 pieces of chicken fillet
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup chicken broth (preferably homemade)
  • grated zest and juice of one lemon
  • ¼ onion, finely chopped
  • 1 clove garlic, also finely chopped
  • 2 tablespoons thyme leaves, also finely chopped
  • 3 tablespoons cooking cream
  • 2 tablespoons butter

Preparation:

Pre-heat the oven to 380°F (or 190 °C). Beat the chicken fillet using a meat mallet so it would be the same thickness that you want. Then season meat with salt and pepper to taste. In the larger pan put a few drops of olive oil and place it to heat. Then put the meat and fry for 6-7 minutes. Meat should get a nice brown crust. After chicken meat is done, remove it to a plate and cover so wouldn’t cool.

Pour the broth in the pan. Add lemon zest and juice, onion, garlic, and thyme and put back on the heat to boil. Cook for 10 minutes, then reduce the heat and add the butter and cream. When sauce is done, add the meat and place together in pre-heated oven for 5-10 minutes.

Serve the chicken with a side dish if desired (preferably some vegetable).
