Tuna and avocado burgers for keto lunch

Ingredients that you need:

  • 2 large cans of tuna
  • 2 tablespoons creamy fresh cheese
  • 1 avocado
  • 2 tablespoons grated Parmesan cheese
  • 2 oz (50 g) almond flour
  • salt, pepper, garlic powder
  • coconut oil, for baking

Preparation:

Pour the drained tuna into a bowl. Add creamy cheese, Parmesan cheese and spices. Then mix all well. Add avocado (chopped to little cubes) to the mixture. Stir the mixture and then make balls using your hands, so they could roll in almond flour. Bake at coconut oil.

Meal-salad with prosciutto (or ham)

Ingredients that you need for this nutritious salad:

  • 100 g mixed green vegetable leaves (lettuce, rocket, spinach)
  • 2 cherry tomatoes
  • 2 tablespoons pine nuts or sunflower seeds
  • lemon juice – one squeeze
  • 1 tbsp grated Parmesan cheese
  • 2 slices of prosciutto (also you can use ham)
  • 1 tablespoon olive oil
  • salt and pepper to taste

Preparation:

Fry prosciutto on a hot pan to become crispy. Then cut it into small cubes or strips and leave to cool. Put all other ingredients in a bowl, then add cool prosciutto, stir well and your keto lunch is ready.

Keto sandwich with chicken and pesto (in cucumber wrap)

Ingredients that you need for sandwich:

  • 1/2 cup fried chicken, sliced or chopped
  • 2 oz (50 g) shredded Parmesan cheese
  • 1/4 red pepper (hot or not, as you like), chopped
  • salt and pepper to taste
  • cucumber, halved and cored
  • 2 tbsp of pesto (it’s the best if you have homemade!)

You can make homemade pesto sauce of crushed basil leaves, garlic, pine nuts, Parmesan cheese and olive oil. Also it could be some similar combination.

Preparation: All you have to do is to mix all the ingredients and then fill up your cucumber. If you like you could add a slice of cheese, but the parmesan is just so delightful here, that it’s totally unnecessary.
