Cabbage is very popular and affordable vegetable with plenty of vitamins and minerals. Because of its nutritive value this vegetable is precious ingredient in almost every diet. It has only 24 kcal per 100 g and out of it protein 1.3 g, carbohydrates 6 g (fiber 2.8 g and sugar 3.2 g) and no fat nor cholesterol.
Because of its properties we suggest simple recipe for low-carb lunch with cabbage and bacon.
Cabbage with bacon
This recipe is easy to prepare but requires more time. The more you cook it on low heat – it’s tastier. Necessary ingredients for 4 servings are: 1 medium sized cabbage, 1 fresh tomato, 1 bell pepper (no matter what color), 400 g bacon and 1 tablespoon of apple cider vinegar. From spices, you’ll need 2 teaspoons of chilli powder, 3-4 bay leaves and 1 tablespoon of homemade mixture of dry spices.
In our recipe this mixture of dry spices contains salt, carrot, parsnip, parsley, garlic and onion. To prepare it, you should chop the ingredients using some electric shredder. We recommend that because you can hardly chop manually the vegetable that finely. After chopping this ingredients mix them, and dry it on the sun or the draft. Put the finished spice in glass jar, close tightly and keep in dark and dry place. You can use it in preparation of many meals.
Directions for preparation
Cut the cabbage in small pieces and then put it in deep pot, only to cover the bottom. Then put over 1 teaspoon of chilli powder and thick slices of bacon. After that cover it with cabbage again and season it with 1 teaspoon both of chilli and mixture of spices. Add chopped (on small cubes) bell pepper and tomato.
Note: you can use 3-4 tablespoons of homemade tomato juice instead of fresh tomato. But be careful when it comes to tomato juice that you’re buying in the stores. Often it contains a lot of sugar, so if you’re on sugar free diet we recommend homemade tomato juice without added sugar.
In the end, add apple cider vinegar and pour over the hot water almost to cover the ingredients in the pot. Cabbage will release additional water during the cooking. It’s necessary that you pour hot water for cooking because it preserves nutrients in this vegetable. Cold water will wipe them out. Cover the pot and cook meal for about an hour. Serve warm.
