This fantastic recipe for broccoli pie is the perfect low-carb meal and you must love it. Also, it could be named broccoli pizza. This recipe contains 4 servings, and total time necessary for cooking is 60 minutes. Thereof preparation time is 20 minutes and only cooking 40 minutes.
Ingredients that you need for the dough are 300 g LCHF flour (almond, coconut or ground flax). Then 75 g butter, 5 tablespoons water and salt to taste.
Ingredients you can use for topping are 1 leek, 1 broccoli, 50 g bacon, 1 chilli pepper and 3 eggs.
Preparation: First, mix the chosen flour with the softened butter, salt and water. Then knead into smooth dough and let it rest for 15 minutes. While kneading you can boil the broccoli and leave it to cool. The best way is if you cut the “boles” and boil them 5 minutes and then add “flowers” and boil together for 3 minutes more.
In frying pan, fry only green part of leek with grape seed oil, chopped. After that add bacon and chilli pepper and remove from the heat. Leave it to cool. Mix cooled and boiled broccoli with leek and bacon, and then add the eggs. Stir well.
Spread the dough into baking pan and stab it with fork. Bake in preheated oven to 175°C for 10 minutes. After moving out from the oven, put the topping over the dough and bake again for 30 minutes.
