Zucchini stuffed with mushrooms, minced meat and mozzarella
This recipe contains 4 servings and total time for cooking is 60 minutes. Thereof, preparation time is 30 minutes and cooking also lasts 30 minutes.
Ingredients that you need are 6 zucchini, medium size; 500 g button mushrooms and 1 red bell pepper. Then 250 g minced meat, 50 g of grated Parmesan cheese and 250 g mozzarella, chopped into cubes. Also, you’ll need freshly grated black pepper, 1 small onion and a few drops of olive oil.
Preparation: Wash zucchini and cut them in half longitudinally. Then hollow out them and place in a baking pan coated with few drops of olive oil. At first of all preheat the oven to 250 °C. Fry minced meat with chopped onion in a frying pan. Then add the content from inside of zucchini. Add chopped mushrooms, chopped red pepper, season with pepper. Finally let it cook for 10-15 minutes or until all is united nice and softly.
When you remove the mixture from the heat, add mozzarella and stir. Fill the hollowed zucchini with the mixture and sprinkle with Parmesan cheese. Finally bake at the oven about 15 minutes.
