For those who enjoy a French salad, there’s a recipe for a simple and rapid preparation of healthy LCHF French salad.

This recipe is easy to prepare and takes little time. Preparation time is 10 minutes, but cooking only takes 5 minutes.

Ingredients which you need are:

  • 4 boiled eggs, but not quite hard, so that the yolk intervene as a cream
  • 200 g of cooked cauliflower and broccoli
  • 100 g peas (you can buy it in jars, already cooked or boil it yourself)
  • salt to taste
  • squeeze of lemon juice
  • 2 garlic cloves, chopped (but that’s optional)
  • 4 tablespoons mayonnaise (homemade)


Remove the shell from the eggs and chop them. Then chop cauliflower and broccoli into small little flowers. Mix it all together.

You can eat salad chilled but you can also keep it in refrigerate for a day. It will be equally fresh. When you keep it, do not put garlic, because it can be harder to digest after a few hours. You can add garlic before serving.

Sunny homemade mayonnaise

This version of mayonnaise is ideal for preparing LCHF French salad, so instead of those from markets it’s better to use this.

All the ingredients that you need are:

  • 1 whole egg and 1 egg yolk (raw)
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • a pinch of pepper
  • ½ teaspoon turmeric powder
  • ½ teaspoon curry or ginger
  • 1 tablespoon mustard
  • 100 ml cold-pressed olive oil
  • 100 ml cold-pressed sesame oil
  • 200 ml cold-pressed linseed oil

Preparation: Eggs, salt, spices and olive oil mix a few minutes with special addition for mixer that is used for preparation of mayonnaise. Gradually refuel other oils and continuously mix until the mayonnaise has hardened. If you put more oil, mayonnaise is going to be harder; with less oil, more liquid.

It is recommended using a lot of spices, for several reasons.

First: the taste.

Second: This mayonnaise has beautiful yellow color, attractive to the eye, because of the color of turmeric.

Third: ORAC – Abbreviation from Oxygen Radical Antioxidant Capacity. In free translation: the strength of antioxidant effect in the body. This capacity is the largest in spices, then slightly smaller (but still large) in berries, nuts, and the lowest in vegetables and fruits in bright colors. All these foods prevent aging and protect our body which is significant for our immunity. Because of that ORAC perfectly fits in context of LCHF.
