Ice cream with pistachios, hazelnuts and blueberries

You can make this excellent ice cream as vegan version with coconut milk, or vegetarian, with cow milk, preferably organic.

Ice cream with pistachios, hazelnuts and blueberries

Ingredients for ice cream:

  • 40 ml of coconut (or cow) milk
  • 2 tablespoons agave syrup
  • pinch of salt
  • vanilla bar
  • Crumbs pistachio and hazelnut: 60 grams shelled pistachios, 4 tablespoons chopped almonds, ¼ teaspoon of baking soda, tablespoon coconut oil, tablespoon agave syrup.
  • Garnish: Fresh blueberries.

Preparation:

Mix coconut milk (or cow), agave syrup and salt in a large bowl. Then cut a bar of vanilla in length and scrape the inner part using a knife. Add to the mixture with the milk, and stir everything well. Then mix everything thoroughly using a mixer. Pour into a bowl for ice cream and leave it to freeze. If you have a machine for making ice cream, then whip the mixture in the machine.

In the meantime, make crumbs. Preheat oven to 180 degrees. Meanwhile, grind pistachios, put it in a bowl. Add chopped almonds and baking soda. Then mix all well. Add coconut oil and agave syrup, and mix well again using hands. Put the mixture on a baking paper and then in the baking tray. Insert it in preheated oven and bake for 4-7 minutes, until crumbs that are close to the edge start to take on a brown color. Leave to cool.

Remove frozen ice cream from the fridge and serve sprinkled with crumbs, with fresh blueberries.

Notes about ice cream ingredients

At first of all, pistachios are a good source of phytosterols, which is a chemical structure very similar to cholesterol. When the plant sterol is present in greater quantities in the body, the lower the level of cholesterol in the blood, stimulates the immune system and reduces the risk of certain cancers.

Thanks to its ingredient anthocyanin, blueberry is the richest source of antioxidants among 40 different types of fruit and vegetables. Leaves of blueberry is a treasure trove of minerals.

From blueberries leaves is prepared tea which is an excellent cardiotonic and diuretic, is good for the treatment of kidney and bladder, and is also used as an ingredient in herbal mixtures to treat diabetes.
